The Nesting has Begun!

trystinnLast night while hubby caught up on Top Gear Challenges, I decided to whip out a few recipes from one of my favorite cookbooks "The Gourmet Toaster Oven". We now have two batches of muffins tucked away in the fridge, one cheddar & bacon muffins and the other coffee cake muffins.
Except something went a bit wonky with the coffee cake muffins - they baked up about 5 times larger than I'd planned. Oh, lovely and light cakes, I assure you, with this HUGE mound rising like a mountain out of the cupcake pan. Perhaps I whipped the batter too long, me thinks. Gorgeous and yummy though. And with a nice surprise. I substituted hazelnuts for almonds in the topping. Hubby doesn't like almonds and I still had some from a chocolate tea cake I made previously.
The lovely Alicia is headed over soon, which means she'll be covered with Gracie and Libby for the remainder of the day. Can't wait to show her the coffee cake mountains.
